Get crispy skin on a fish slice results more hard than one can imagine. If one lays the slice on hot check, it usually curves upward. That leads to uneven cook and soft skin.
Using a fish press, one can settle that, because it presses the slice flat against the surface. Like this the skin becomes nice and crispy, during the flesh cooks equally. At first sight, a fish press looks a lot like a burger press.

Now, guessing the Weight of a real fish is entirely different. A common method for trout is this: one multiplies the girth by the girth, later multiply by the length and divide by 800. The girth and length measure in inches, and the result gives pounds.
When fishes in a certain region weigh more or less than average, one can adjust the number up or down. If one can not measure the girth, one sometimes uses a default of 0.58 times the length instead.
Charts of length to Weight are available for certain species, even though they do not always match exactly. Long and slim fish, just like short and thick from the same group, can have very different weights. Only the length does not always reveal everything.
Measuring both length and girth help to get a much better guess.
Fish can loose Weight after capture. Bleeding, vomiting and waste all play a part. But most commonly the water loss is the main cause.
A live fish stays in water and always works to keep the right water balance in its body through a process called osmoregulation. So the Weight during capture can differ from what one notes later.
For truly weighing fish, a digital hanging scale with a built-in lip grip works well. The grip clicks right in the center of the bottom jaw. When the scale has only a hook, one can add a separate pair of lip grips and subtract their Weight using the zero function.
Some anglers reckon that measuring length beats Weight, especially for fishes that one will release. The Weight can adjust up or down, but a fish length nevershorts. Always try to keep the fish outside water as short as possible.
