Next thing you do is stand there with a pile of jars and a bowl of fish on the counter. Panic sets in. Do I have enough to fill all these jar? Am I going to make it? Twenty pounds of fresh catch, say tuna, sounds great.

Except much of that is bone and head. When cooked, amount of flesh drops. Weight is lost as naturaly juices leave. So what does it all mean? After you enter the species and your initial weight, the calculator do the math for you. You don’t have to guess at things like density coefficient or trim loss. A pint jar isn’t actualy 16 ounces when full. If you leave space (headspace) inside the jar for expansion and steam pressure, there’s no way you can fit that much into a single jar. (It’s literally impossible.) The tool factors out the “working” volume of a jar. Depending on the type of fish you select, it tells you exactly how many real-life jar you’ll get.

Tuna is dense and packs tight. Flaky whitefish has lots of air pockets between chunks. Know which one you’re getting so you don’t shortchange yourself when you calculate how many cans/jars you have stored in your pantry. Don’t underestimate amount of air that gets trapped in each jar. Amateur calculations get skewed by the level of trim involved. Do you gut and clean your fish? That’s losing between twenty and twenty-five percent of your fish, that’s the heads and guts plus skin. Are you starting out with fillet? Then the loss is much less.

One question the calculator will ask: What state were your fish when you started dressing them? Twenty pounds of loins doesn’t equal twenty pounds of round fish. Understanding how fish behave in heat helps us understand their safety and know what to expect. Your pack style affect how much you get, too. Simple: Raw packing (with all those naturaly juices) is loose. Hot packing (with flaked fish) is dense. Hot packing pre-cooks the fish as it goes into the jar. That’s good because it settles the fish and gets rid of any air pockets. More fish fits in each volume. But that means the fish has shrunk a little bit during cooking. Those shrink percentages are accounted for on the calculator. It changes the final drained yield guess.

And drained yield is what matters most. This is what you will eventually put on your plate. It’s the drained fish weight (the amount after opening the jar and pouring out the juice). That’s more important than the total packed weight. That’s how many servings you’re really getting.

When I say many home canners stop here, that means they stopped counting jars but didn’t think of final amount. That’s great; they got 10 jars filled! They pop open one and realize most of it was liquid. By tracking how much was drained off you can compare batches over time: did the sardines shrink more than the trout? Did the brine absorb more water then expected? All these are details that turn the guessing game into a reliable system. Preserving isn’t simply a matter of filling jars. Preserving means keeping food safe while getting most flavor and nutrients (no waste of any resource). This is particularly true for fish.
